As you well know… The Girl Scout cookies only come around once a year.
Which is a blessing AND a curse.
I mean – could you imagine if those coveted cookies were available ALL YEAR?
The WORST was when I was pregnant and I’d get a GSC (Girl Scout Cookie) craving during the off season.
Sure, one can buy enough to store in the freezer and last the year, but really…. who can even control themselves?
Not me.
Knowing this, I do not pretend I have control and do not stock a year’s worth of GSC in my freezer. But I do have this little trick up my sleeve…

And the ingredient list is almost as simple as getting water from a faucet… Ritz crackers and Wilton’s Dark Cocoa Mint Candy Melts.
And I’m not trying to toot my own horn here… but these actually take the awesome of this style of cookie to an 11. They are even more dangerous if you struggle with keeping your cookie consumption to a reasonable quantity.
