Slow Cooker Pulled Pork Nachos, y’all!

Tailgate season is in FULL SWING: friends and football and food!

I am going to share with you how to make Slow Cooker Pulled Pork Nachos because the world needs more pulled pork nachos in it’s life.

There are 2 things that make parties great… great food, and a hostess that is not all frazzled from working so hard to prep for the part she is too tired to enjoy the party… This is a recipe produces a GREAT dish as well as helps the hostess have the mostest when her guests arrive.

Season the pork shoulder with one package of your choice of taco seasoning.

Cut up an onion…

Add the onion to the slow cooker. Place pork shoulder on top of the onion (you can choose to brown the pork shoulder before placing it in the slow cooker, if you like to do that). Pour 2 cans of root beer over that…

Looking good!

Set the slow cooker for 8-10 hours and remove pork shoulder and simply pull apart…

Place in a large pan, add another packet of taco seasoning (or 1/4 of your own) and if you like a smoky flavor, add about 2 tablespoons of liquid smoke.

And then prepare yourself for the compliments!

I make my own queso “dip” our of Velveeta and salsa and a bit of milk. Serve with tortilla chips, diced tomatoes, avocado (or guacamole!), diced green onion, refried beans (or black beans), salsa, sour cream… and that kind of nacho-topping stuff. What am I missing… olives? Jalapeños! This is where you can get really creative.
